If you enjoy espresso-style crema, this isnโ€™t the maker for you. But itโ€™s ideal for capturing nuances of the bright, fruity single-origin coffees currently in vogue. Invented in 1941, the Chemex is little more than an open-topped hourglass, elegant in its simplicity. Thick filter papers trap grind sludge, allowing water to drip through unhurriedly to create a brew thatโ€™s clear and without bitterness. Itโ€™s less of a faff than espresso, but the dose needs to be consistent โ€“ papers should be primed and the grinds need time to bloom โ€“ so itโ€™s not exactly set and forget. With its good looks, though, itโ€™s easy to see why itโ€™s a hit with restaurants.
