Sydney-based fans of the gentle art of making hamburgers have never had things so good. The field improved significantly with the recent appearance of Mary’s (6 Mary St, Newtown), a good-time tavern with a blackboard menu that includes not just the best bar burger in town, but quite probably the best burger full stop. Their secret? Having former Tetsuya’s head chef Luke Powell on the pans certainly doesn’t hurt. (The fried chicken is also killer.) The other big new player, again backed by fine-dining know-how, is Chur Burger (48 Albion St, Surry Hills, 02 9212 3602), run by Warren Turnbull on the site of his lauded Restaurant Assiette. Back in bars, the burgers served at Rockpool Bar & Grill still soar on wings made of wagyu and zucchini pickles (the Chinese-style pork bun thing at the Spice Temple bar downstairs also kills it), while the bar burger at the Four in Hand also packs a wallop. The Fish Shop still serves the burger Dan Hong served when the site was Lotus bistro, but Jeremy Strode’s fish version might just be the superior offering.
