Join Gourmet Traveller editor Joanna Hunkin for a sparkling celebration under the stars, as we discover Chandon Étoile and some exceptional vintages with a special menu by Gourmet Traveller’s Chef of the Year, Pasi Petänen.
Petänen joins forces with fellow top chef Mitch Orr to present a sparkling feast at the Ace Hotel’s rooftop gem, Kiln. Petänen, who also claimed the NSW’s State Winner prize for Restaurant of the Year, will bring some of his signature dishes from Cafe Paci to Kiln for one night only, as the pair collaborate on a special celebratory menu.
And what a celebration it will be as we pop the cork on Chandon Étoile, which is French for “star”, giving readers an exclusive taste of the Australian sparkling’s first edition, paired with Petänen and Orr’s dishes.
Deepening their understanding of this special drop, guests will also be invited to taste Chandon Vintage Brut 2012, which chief winemaker Dan Buckle will hand disgorge especially for the evening.
Throughout the night, we will speak to the chefs and learn about Chandon Étoile, which combines eight exceptional years of Chandon Vintage Brut to create a multi-vintage blend that has been hailed by critics as one of Australia’s best sparkling wines.

The Making Of Chandon Étoile
Twenty-five years ago, Buckle had his first taste of the great wines of the world he had previously only dreamed about. The finesse and complexity opened a new vista of what was possible, inspiring the creation of Étoile.
Étoile is a multi-vintage composition that represents hundreds of base wines and is rounded out with extended ageing. It reflects the ceaseless quest of past and current winemakers to create the most exceptional sparkling wines, and as such is a toast to the free thinkers, the pioneers and the stargazers. Each sip is a reminder to look to the heavens and ask: what if?
