His eponymous restaurant and hotel empire crosses 40 cities across the world, but now chef Nobuyuki “Nobu” Matsuhisa is set to open the latest restaurant in the Nobu franchise in the Crown Sydney casino-hotel development in Barangaroo.
The modern Japanese-Peruvian fine-dining restaurant already has locations in Melbourne and Perth (both are currently closed due to COVID-19). Matsuhisa joins Clare Smyth of London’s Michelin-starred Core in the Sydney casino’s culinary line-up – a total of 14 restaurants and bars are set to join the Barangaroo development.
“Sydney is one of my favourite cities and the food scene has always impressed me – the quality of the produce is stand-out,” said Matsuhisa in a statement. “I am looking forward to bringing Nobu to what is already one of the most interesting cities in the world!”
Though the menu is being finalised, two signature Nobu dishes – the miso-marinated black cod and yellowtail sashimi with jalapeño and yuzu soy – have been confirmed.
The chef – who is often referred to as “Nobu” – was born in Saitama, north-east of Tokyo. After training as a classical sushi chef, he moved to Lima, Peru to open a sushi bar. It was there he was forced to improvise on Japanese cuisine with local ingredients, spawning the cross-pollination of Japanese-Peruvian cuisine for which the Nobu brand is known.
Sydney’s Nobu will be co-owned by Matsuhisa and Crown Sydney, as well as actor Robert De Niro and film producer Meir Teper. Both De Niro and Teper are investors in the original Nobu that opened in New York in 1994.
To wit, Matsuhia has played bit parts in three movies starring De Niro, including Martin Scorsese’s Casino.
Nobu Sydney is set to open in December 2020.
