The Old Fashioned, for many pundits the ur-cocktail from which many great drinks are descended, is having another day in the sun. Traditionally made with American whiskey, its simple, elegant formula also works wonders beyond the world of bourbon and rye. Scotch, rum and Cognac are popular variants (combinations of fine rums and either Cognacs or bourbons can be very appealing), but a decent sipping tequila can also work well. 1.Crush sugar cube with water and bitters with the back of a spoon in an Old Fashioned glass or other low, heavy tumbler. (Alternatively, mix sugar syrup with bitters.) Add 2 or 3 large, solid ice cubes, tequila and orange peel, stir very thoroughly, then serve.
