This is traditionally made with Gosling’s Black Seal, a rich dark rum from Bermuda, and the drink and the brand are so synonymous that Gosling’s has registered the name. It’s not readily available in Australia, though, so we recommend a similarly complex, caramel-toned rum from Flor de Caña or Ron Zacapa. And the ginger beer? Bundaberg’s rum might not be our first choice here, but their natural brew is our favourite mixer. Pictured with silver dollar burgers.
