Don’t let the silly name fool you. Doot Doot Doot, the marquee restaurant at Jackalope, Gourmet Traveller’s 2017 Hotel of the Year, is a must-do when on the Mornington Peninsula. For starters, there’s the 10,000-bulb chandelier pulsing above the dark-hued dining room. Then there’s a wine focus that embraces the estate’s Willow Creek repertoire and small producers both Old and New World. But mostly it’s about chef Guy Stanaway’s ambitious local ingredient-focused food. Bread gets a wonderful sourness from chardonnay yeast lees and comes with butter whipped with dashi. Tomato and verjuice granita arrives on lavosh with Main Ridge goat’s curd, black garlic and baby beetroot. Spanner crab is thrillingly combined with a potato emulsion and bottarga while a take-no-prisoners dark chocolate dessert features Pedro Ximénez, raisins and prunes.
