“We call this the Marrickville, continuing the tradition of naming classic cocktail variations after their suburb or borough – the Red Hook, for instance, and Bronx,” says Griffin Blumer of Poor Toms Gin. “Although the classic Martini is already perfect, this version complements our Sydney Dry Gin. The Lillet Blanc draws out the freshness of the apple notes, while a splash of Aperol lifts the light, sweet berry elements in the gin.”

1.Stir ingredients in a cocktail glass filled with cracked ice, then strain into a chilled coupette. Garnish with a slice of green apple or two and serve.
