On the east coast, eat oysters alfresco at Freycinet Marine Farm (1784 Coles Bay Rd, Coles Bay, 03 6257 0140); the best fine dining is at Palate (Saffire Freycinet, 2352 Coles Bay Rd, Coles Bay, 03 6256 7888), alas for guests only.
